Beef Shares

In case you missed it over the long off-season, we've added another option for buying Cordray Farms Beef!

We still sell whole sides of beef, but now we are selling 1/8 shares.  A share contains steaks, roasts, stew beef, stir-fry and hamburger.  A share is approximately 50 to 55 lbs. and costs $4.75 per lb. When packaged and frozen, that's about 2 boxes full.

We only have shares available at certain times. That's why we keep an email list to let people know when they are ready. Why does it take so long?  Well, there are really 2 areas that take time. 

One  aspect is that we won't harvest an animal until it reaches its full potential.  That  makes for obviously more meat per carcass, but also better quality steaks and roasts. Our time to maturity  is determined by our animal's genetics and our pastures.  Cordray Farms  prefers a cross-bred animal that matures slowly and has good temperament and mothering abilities. Since our beef is mostly grass fed, pasture conditions are also vital. If the good Lord sends rain, we have fat cows. If not, it takes longer for the cows to reach their best condition. 

The next time consuming part  is that all our beef carcasses must undergo a slow dry aging process. Unlike most beef you'll get from the grocery store, Cordray Farms beef hangs in full sides at a controlled temperature and humidity. The fat covering of the side of beef keeps the meat from drying out as it ages for enhanced flavor and tenderness.  Carcasses hang for 14 to 21 days. How do we know when it's right? We take test slices and grill 'em! It's  a tough job, but somebody's gotta do it! When the flavor and tenderness are just right, we'll cut, package and freeze your share to stop the aging process at the meat's peak of quality. When you unthaw your steak, you'll know that you're preparing the best quality, most nutritious beef in the Lowcountry!
